Did home cooking make us human
Peter Aldhous,[link widoczny dla zalogowanych], Bay area bureau chief
Primatologist Richard Wrangham of Harvard University reaches the AAAS meeting promoting his provocative idea: that a change to cooked food, which occurred using the emergence of Homo erectus around 1.8 million years ago, would be a pivotal event in human evolution,[link widoczny dla zalogowanych], resulting in bigger brains,[link widoczny dla zalogowanych], smaller teeth and reduced gut size.
This past year Wrangham showed that modern apes have an innate preference for cooked food,[link widoczny dla zalogowanych], arguing our ancestors might have behaved in much the same way. Anthropologists weren't entirely convinced that this was a clinching argument, but Wrangham is now back with more evidence to bolster his case.
His latest work documents the energetic benefits obtained by cooking, which softens foods by breaking down hard-to-digest starch and proteins. "Softness is energy," he told reporters at the AAAS.
Still, the sceptics might take some convincing. The issue is finding archaeological evidence to link the use of fire with the anatomical changes that Wrangham attributes to the adoption of cooking: while remains of charcoal can be seen as far back as 250,000 years back, states have uncovered earlier evidence are controversial.
Wrangham is adamant that contemporary evidence supports his theory, however. "Cooking may be the signature feature of the human diet,[link widoczny dla zalogowanych]," he says. "The cooked dinner is universal for hunter-gatherers."
Cooking also makes things safer to eat,[link widoczny dla zalogowanych]. We believe of the nutrients that heat destroys but it stops working things and also helps you get more in the food.
Also,[link widoczny dla zalogowanych], I've got a pet indisputable fact that alcohol helps extract more nutritional elements, when consumed with foods, and particularly the beneficial coloring agents from fruit. Considered that because during wine making, it is not until some alcohol is produced that the color in the grape skins starts to be extracted in to the liquid. otherwise it is trapped in the grape skins. So I'm half serious about the results of wine and beer on diet and therefore upon human evolution.
Wine likewise helps prevent some food pathogens from getting you. ("Have a little wine for your stomach's sake,[link widoczny dla zalogowanych]," Peter's advice to Timothy (? did I recall that right?) And, if I may continue, vinegar (wine gone bad because of bacterial infection) may also help get more nutrients from leafy greens.
So it's the entire of the 'civilized' diet,[link widoczny dla zalogowanych], made possible by a brain that may plan and organize. Someone would have remarked that heating increases quality and usable yield. Then more nutrients, more thoughts, and then baked Alaska. Pretty obvious, really.
Being cooking enthusiasts, I figured you may be thinking about an online discussion about how cooking made us human. It starts tomorrow (Friday the 26th.) Maybe you've heard about it Catching Fire,[link widoczny dla zalogowanych], by Richard Wrangham. Wrangham argues that we humans are who we're because we learned to cook-- that cooking was the key component that spurred our evolution.
Tomorrow, Wrangham is going to be on The World Science Podcast after which he will be online to go over his ideas with anybody who wants to chat through camera. He'll check in through the week, til July 3. Almost anything is fair game-- your own undertake food and evolution, your questions, your knowledge about raw vs. cooked food, your preferred zebra recipes Smile
